The cooks at La Vialla prepare the jams in the kitchen workshop’s “Pentoloni” (= big pans). They have the look and taste of rustic “home cooking”, contain generous quantities of fruit, well above the 45% required for “extra” jams, and are only sweetened with grape must, without using any sugar. Excellent for breakfast or for filling tarts and cakes, delicious with fresh cheeses (ricotta, “fior di latte”) as well as with mature cheese and game dishes (with which they’re even better mixed with a pinch of chilli pepper or a drop of balsamic vinegar).
