Sicilian olives (Nocellara del Belice) - green, small but plump and incredibly tasty - in brine, a mixture of water, salt and lemon. Prepared in this way they are “plain and simple”, delicate, ready to be used as an ingredient for cocktails, or to liven up a tomato or meat sauce. They’re also perfect to use, chopped, in rice or pasta salads, or in a chicken salad.
