On bruschetta, bread sticks, grilled or raw vegetables, it’s excellent with aperitifs and appetizers. It can also be used to make tasty sauces, or for onion soup with toasted bread and a little vegetable broth, with meat dishes (even grilled) or as a filling for savoury pancakes and omelettes. Mix it with other sauces – for example Pomarola, Ragu, Peperotta – to “strengthen” the flavour.
