At the Fattoria the tomatoes, ripened in the summer sun, are prepared using a “home cooking” recipe: blanched in salted water for 2 minutes, cooled down, peeled and put into jars with tomato juice. Plump and rich in flavour, for creamy sauces – not cooked at length – and all recipes that require tomatoes.
