A Grand Cru from the Fattoria’s smallest vineyard, Casa Quaranta. Production of this wine, which is very limited due to the size of the vineyard, is also characterised by a particular technique that is as simple as it is meticulous. The 2020 season concluded with an alternation of sun and rain, and yielded small bunches – typical of Cabernet – which were extremely ripe. Vinification was carried out in terracotta amphoras, containing 3 and 5 hl, without controlling the temperature or adding sulphites. During the 22 days of maceration on the skins, light manual punching down (or pumping over) was carried out. After racking and malolactic fermentation, the wine aged for 24 months in new barriques. Finally, the various barriques were blended and, without filtering, the wine was put into magnum bottles.
Tasting – Colour: dark ruby red, with slight purple highlights, dense. The nose: the vanilla notes from the new wood mingle with those of the grape varieties, sweet spice, bell pepper, hints of cherries preserved in alcohol, dried roses, plums and blackcurrants. In the mouth: pleasantly intrusive due to its velvety tannins, with an important alcohol content but well-balanced thanks to the extraction of silky, soft, almost sweet polyphenols, with really intense persistence.
Wine and Food Pairing – Polenta crostini with “formaggio di fossa”, gnocchi with duck ragu, “Stufato alla Sangiovannese” (stewed beef with lots of spices and pepper, cooked at length).
