Fresh and fruity, elegantly mineral and very vivacious; the house white is a blend of soft, full-bodied Chardonnay and two fruity, fresh varieties with tropical aromas, Viognier and Sauvignon. The spring of 2023 was the wettest in recent years with low temperatures until mid-June, which meant that the vines delayed their development by about two weeks. July and August, on the other hand, were extremely hot, and as a result the grapes and bunches were small, but concentrated and of excellent quality. The harvest was carried out in the first week of September, with the grapes picked quickly and pressed softly. The musts obtained didn’t have a particularly high sugar content.
Tasting – Colour: straw-yellow with slightly greenish nuances. The nose: initially vegetal, notes of tomato leaf with an agreeable touch of white-fleshed fruit and tropical hints such as pineapple and litchi. In the mouth: aromatic both at the onset on the palate and in the aftertaste, with typical citrussy and green notes of Sauvignon.
Wine and Food Pairing – It goes wonderfully with nibbles and appetizers – even spicy ones! – grilled vegetables, frittatas and blue cheeses. Excellent in all seasons, with an orange and fennel salad, with olives (in brine, spicy or with orange), as well as with oven baked rigatoni with squash and cauliflower purée. It makes a perfect combination with liver, meat or smoked fish terrines, or with a seafood platter.
