The story of Parmigiano Reggiano cheese appears to have its origins about a thousand years ago, in the Benedictine and Cistercian monasteries of the area between the cities of Parma and Reggio Emilia. Thanks to the monks’ skilful work and the salt extracted from nearby salt mines, a hard cheese that could be preserved at length was created. In the Decameron (1351), Giovanni Boccaccio describes the “Paese del Bengodi” (= land of milk and honey): “Et eravi una montagna tutta di formaggio Parmigiano grattugiato, sopra la quale stavan genti, che niuna altra cosa facevan, che fare maccheroni e ravioli e cuocerli in brodo di capponi, e poi li gittavan quindi giù, e chi più ne pigliava, più se n’aveva” (= … and there was an entire mountain of grated Parmgiano cheese, upon which dwelt people who did nothing else but make macaroni and ravioli and cook them in capon broth, and then they would throw them down, and those who gathered the most, had the most …)
La Vialla’s Parmigiano Reggiano is aged 30 months and comes from its land of origin, the province of Reggio Emilia, from organic agriculture and cattle farming, as well as being produced with respect for the environment. Besides tasting wonderful, it also has excellent health properties (high content of calcium and phosphorus). It doesn’t contain lactose and can be used in many ways: the most common one is grated on top of pasta (dressed with any sauce), in oven-baked lasagna with ragu or in other versions, or in flans, it’s ideal in “chunks” with aperitifs or appetizers, and in flakes on beef carpaccio… a slightly more unusual way to taste it is with a nice glass of Vin Santo Riserva for an amazing dessert.
