Grape blend: Verdicchio, Trebbiano Toscano
Bubbly but with 0% alcohol… it was with this idea in mind that the sparkling “Mini-Spremuta frizzante” was created 10 years ago, made for children and teenagers, and often also appreciated by adults. In its blend, well balanced between sweetness and freshness, we find Trebbiano Toscano – which gives marked acidity – and sweet, aromatic Verdicchio, an unusual but successful combination. The hot, dry season caused ripening to come to a standstill in the first half of August… fortunately it resumed in the second half of the month, when intense thunderstorms and rain helped the grapes swell up, and balanced the acidity and sugar content. The harvest began at the beginning of September and gave us grapes with excellent flavour. The bunches are pressed whole to favour rapid crushing, and only the noble part of the freshly squeezed juice is extracted. It is immediately cooled, in order to prevent any form of fermentation, and then left to “decant” for at least 24 hours. The juice is bottled with the small amount of sediment that remains (resulting in its cloudy appearance and wealth of aromas) and then quickly pasteurised.
The first sip: its yellow – almost golden – colour and the evident cloudiness illuminate the bottle. Distinct aromas of white-fleshed fruit, wildflowers, camomile, apricot and, eventually, baked apple that evolves after a few months. Its pleasantly effervescent taste accentuates the balance between sweetness and acidic freshness.
