Grape blend: 100% Sangiovese
The grapes for this new “spumante” – bubbly, 100% Sangiovese, 0% alcohol – were grown in a year with challenging meteorological conditions. The hot weather arrived early, in mid-May, without a drop of rain for three months… it seemed as if it would never end! In the second half of August the summer finally “broke”, with brief, beneficial showers and a few downpours alternated with sunshine, which helped the vines and made the grapes swell. Our friend the Sangiovese, a quintessential Tuscan, resisted well, also thanks to biodynamic techniques and a little emergency irrigation during the tremendous heat. After destemming and pressing, the grape juice macerates on the skins for approximately 6 hours, to extract as much colour as possible. It’s kept at a temperature of 0 °C for 24 hours in order to inhibit fermentation; this gives the coarse sediment time to settle and be eliminated without filtering. The “Spremuta” is bottled with the right amount of fizziness and fine “pulp” (the noble part of the sediment), closed with a champagne cork – like sparkling wine – and quickly pasteurised. In this way it maintains the sweetness of grapes fresh from the vineyard, but well balanced by its acidity and a hint of sweet tannins. Ideal for youngsters, it’s also extremely pleasant when you wish to enjoy the goodness and vitality of some “sparkling” grape juice, without alcohol.
The first sip: it’s a nice purple-red colour with violet highlights, which will tend towards garnet as time passes. It has the fragrance of violets and small woodland blackberries and is pleasantly sparkling. The acidity is balanced by its natural sweetness. It tastes of freshly picked grapes, as well as the aromas perceived previously.
