Olive blend: 80% Ogliarola Garganica, 20% Coratina
The big trees, which have always been accustomed to hot, dry summers, were helped by irrigation systems that were made more efficient two years ago on account of the extraordinary weather conditions. These systems, which began functioning at the beginning of June, allowed the trees to survive the long, dry summer well until the first rain arrived in the middle of August. Particularly hot temperatures have the advantage of making life impossible for all kinds of pests, a task in which they are certainly helped by years and years of organic-biodynamic cultivation: biodiversity keeps the worst enemies away from the plants! As autumn arrived, the olives carried on ripening steadily and reached harvest time, around October 20th, healthy and full of… oil.
The “Olio Novo” La Malva 2022
From Ogliarola Garganica and Coratina olives that are perfectly healthy, this extra virgin olive oil is green with brilliant yellow highlights. The nose detects intense aromas of freshly the pressed fruit, olive leaves, nuts, walnut husk and agave juice. In the mouth it’s intense but immediately soft, with a slightly spicy aftertaste. Versatile in the kitchen, it’s very much at ease on the stove: with tossed or grilled vegetables, to make fresh pesto, season fish (for example sea bass with oil and lemon), prepare roast potatoes with rosemary, dress a mixed grill and make the typical sauces that go with it. Store it in a dark, cool, dry place.
