Olive blend: 50% Morellino, 50% Leccino
For more delicate palates and recipes with a “subtle” flavour, a couple of years ago we created Olio La Vialla “Leggero”. It’s made with carefully selected olives that taste softer and mellower, varieties like Leccino and Morellino, which when fully ripe have a flavour that’s less intense... and therefore “leggero” (mild)! Combined, they give an extra virgin olive oil that smells of spring grass, with floral and balsamic notes. In the mouth it’s suave and well-balanced, with almost imperceptible bitter and spicy sensations. It’s perfect for making mayonnaise, dressing vegetables and salads, enhancing the flavour of fish. And it also satisfies the most refined and demanding “tasters” – children!
