The grapes for this light, fruity, aromatic, semi-sparkling wine from La Vialla grow in the calcareous soil of the Oltrepò Pavese area. The 2022 season saw periods of torrid heat followed, luckily, by some rainfall a few weeks before the harvest. When picked, the bunches were large and the grapes slightly less plump than usual, with a wealth of aromas. The grapes are pressed whole, extremely softly, the must is separated from the skins and immediately cooled, in an oxygen-free environment, to preserve the delicate aromas. A few days before bottling, it undergoes fermentation at a low temperature (14 °C); when an alcohol content of 7% vol. is reached, fermentation is blocked, and the wine is bottled immediately. This ensures that, in the bottle, we find the characteristics of the Moscato Bianco grapes straight from the vineyard, their freshness and acidity, accompanied by the typical sweetness.
Tasting – Colour: bright golden yellow, with slight copper highlights. The nose: fine tropical notes that recall pineapple, as well as jasmine and acacia honey, with hints of citrus fruit. In the mouth: it’s fresh and sweet; the tiny bubbles, with their fruity and floral fragrances, burst on the tongue in harmony with well-balanced sweetness and acidity.
Wine and Food Pairing – At the Fattoria it’s also popular as an aperitif. Its sweet but dry flavour makes it a good companion for mature pecorino cheese served with honey and jam, or for crostini with “lardo” and Tuscan “crostini neri”, or sweet cured ham.
