An unusual red from La Vialla: it has light, soft tannins, fresh, fruity aromas and… is drunk chilled! From Sangiovese and Montepulciano grapes, grown under “canopies” of leaves (no thinning out was done) that protected them from the hot sun of 2022. Cold maceration (at 6 °C) lasting roughly 5 days guaranteed the extraction of sweet, light polyphenols and of anthocyanins, the pigments found in the skins of red grapes, which are particularly important for the wine’s quality. Continuous fermentation, at a low temperature, without the skins, avoided the extraction of heavy tannins. The structure of the Sangiovese is present, but softened by the special production method and by the blend with Montepulciano that adds elegance.
Tasting – Colour: strikingly intense purple-red that colours the glass with violet reflections. The nose: surprisingly fruity and floral for a red, aromas of Marasca cherries, plums and prunes, red roses and violets. In the mouth: pleasant with a slight natural effervescence, good acidity and consistency.
Wine and Food Pairing – Served chilled (around 10 °C) it’s delicious as an unusual aperitif or for a summer picnic, with classic appetizers or spicy crostini, with fresh cheeses and cold cuts; it’s also good for making Sangria. It adapts to flavoursome fish dishes, Cacciucco (= Tuscan fish soup) or cuttlefish “in zimino” (with Swiss chard); it puts out the fire of a dish of pasta “all’arrabbiata”, or a mixed grill with Piccantissima sauce.
