Rich, full-bodied, fresh and fruity... these characteristics are well-balanced in this Viallino blend, an outstanding wine that has always (since it was created in 1992) been unfettered by regulations. It’s a “small” Super Tuscan that deliberately skips the period of ageing in wood in order to favour freshness. The 2022 season was marked by a scorching summer with some rainfall towards the end of August, which gave us bunches of plump, juicy grapes. The wealth of polyphenols and their ease of extraction made it possible to lower the temperature for alcoholic fermentation to 23-24 °C, in order to preserve the more delicate aromas. After malolactic fermentation, the three base wines aged together in steel so that the primary notes of the grape varieties were enhanced to the full.
Tasting – Colour: intense ruby red that tends towards garnet. The nose: red fruits such as cherries and plums, blackberry jam with sweet spicy and balsamic nuances. In the mouth: despite the wealth of tannins, it’s soft and tastes fresh and fruity thanks to the absence of woody notes.
Wine and Food Pairing – It’s a perfect companion for typical Tuscan first courses, from “ribollita” to pappardelle with meat ragu, as well as for robust risottos, for example with porcini mushrooms or leek and sausage, for Strozzapreti pasta with Tuscan kale pesto, roast red meats, grilled cheeses, flavoursome cold cuts and – why not? – for a simple panino with cured ham or “capocollo”...
