The most typical Viallino “spumante” combines the elegance and freshness of Pinot Nero grapes with the body and acidic dryness of Trebbiano Toscano, in an excellent, pleasant balance. In hot years such as 2022, the delicate aromas of flowers and fruit are carefully safeguarded. To protect the grapes from getting too much sunlight, the vines’ shoots were neither “topped” nor de-leafed. In fact, the grapes’ degree of ripeness mustn’t be too high so that the alcohol content of the sparkling wine is not excessive. The two base wines (from the two grape varieties) are fermented rapidly and with the temperature carefully controlled in order to preserve the aromas. A few months after the grape harvest, they are blended and referment in pressurised tanks, where the creamy bubbles of this fresh sparkling wine come to life.
Tasting – Colour: straw-yellow full of greenish highlights; it tends to get darker as time passes. The nose: floral – camomile as well as very delicate jasmine – with notes of Golden Delicious apples and toast. In the mouth: the clean, widespread effervescence propels the aromas towards the palate and amplifies the retro-olfactory persistence.
Wine and Food Pairing – Serve it with salt cod and cherry tomatoes, warm pecorino and rosemary crostini, pear and Gorgonzola risotto, pasta or rice dishes with seafood, fried vegetables or fish. And it’s perfect for the Viallino aperitif called “Fragolino” (½ a jar of La Fragolina mixed in a jug with 1 bottle of Le Chiassaie)… cheers!
