The hills of the Verdicchio Classico D.O.C. production area, just a few kilometres from Ancona, are close to the Adriatic Sea, and at times its aromas manage to reach them. The area’s soil gives us a fresh, fruity, citrussy wine, which has tropical hints and is slightly saline. The last few years have really put the vines – and the Viallini who cultivate them – to the test: again in 2022 there was little rainfall throughout the season, while at the end of summer, during the harvest, there were some brief downpours. Harvesting was therefore split up and done rapidly. Thanks to these “flash harvests” the bunches were picked healthy and full of juice, with limited alcohol content and good acidity. Only the “cream” of the grape must was selected for fermentation. During the following months it aged with a few, selected, fine lees, which were then removed before bottling.
Tasting – Colour: straw yellow that becomes more intense as time goes by. The nose: Citrusy at first, with a broader sensation of yellow peach and tropical hints in the finish. In the mouth: austere, acidulous and harmonious, with an aftertaste of nuts.
Wine and Food Pairing – Served well chilled, it goes well with the cuisine of the Adriatic: fish first courses such as linguine with clams, or shellfish prepared in every possible way. It also happily “fraternises” with delicate risottos (for example with asparagus), linguine with pesto, grilled vegetables, as well as with goats’ milk cheese and soft cheeses in general.
