A fruity fresh wine that is both dry and soft at the same time, from a 100% Viallino "recipe" that combines an elegant, full-bodied grape variety, Chardonnay, with two lively and aromatic ones, Viognier and Sauvignon. To mitigate the increasingly tropical temperatures in the vineyards of Sauvignon and Viognier, we didn’t “top” the vines, so that the drooping shoots protected and shaded the bunches of grapes and, consequently, their primary aromas. The grapes were picked early in the morning, they were pressed straight away and the must immediately cooled. Fermentation took place at a low temperature, and bâtonnage of the fine lees continued until roughly 30 days before bottling.
Tasting – Colour: strong straw-yellow. The nose: rich and variegated with a wide range of tropical fruits, from pineapple to passion fruit and lychee, as well as peach and a slight hint of boxwood. In the mouth: explosive in its aromatic opulence, which lingers on the palate and in the aftertaste; appropriately tart and young.
Wine and Food Pairing – It confidently accompanies nibbles, appetizers – even spicy ones! – grilled vegetables and frittatas, as well as going perfectly with blue cheese, pasta dishes for all seasons (from a pasta salad, to oven baked rigatoni with squash and cauliflower purée), terrines of liver, meat or smoked fish, or even a seafood platter.
