This white wine, which has now reached its 36th vintage, comes from the vineyards at Casa Conforto, one of the Fattoria’s first farmsteads. Its secret lies in the unique character of the Trebbiano Toscano, typical to the area, fresh and floral, combined with “Monsieur le Chardonnay”, giving body and elegance. The Chardonnay has small bunches that need to be harvested early, in 2024 they were picked before the September rainfall, while the Trebbiano grapes reached the winery later on, plump and juicy thanks to the abundant precipitations. The must was less sweet but well-balanced in acidity and freshness, characteristics that were maintained thanks to low-temperature fermentation. The fine, noble lees were kept in suspension to protect the wine, so the use of SO2 was reduced to a minimum.
Tasting – Colour: intense yellow, brilliant and gleaming. The nose: floral notes of yellow roses, hay and fresh grass, hints of citron, walnut and other nuts. In the mouth: soft and dry, the typical characteristics of Trebbiano stand out.
Wine and Food Pairing – Simple, versatile, never banal, it goes well with appetizers of fried vegetables, crostini with Asparagina, with artichokes in olive oil, frittatas, delicate cold cuts, young cheeses. It also makes excellent company for pasta first courses (penne with artichokes and pecorino, pici “cacio e pepe”, fusilli with creamed peas and pancetta) and with seafood dishes.
