Grapes selected in the vineyards in the Oltrepò Pavese area give rise to these fine, silky bubbles, with their elegant aroma of brioche, typical mineral notes and aristocratic pink colour, for a great Viallino "champagne“! The bunches were picked by hand and then soft-pressed whole. Only the noble part of the grape must obtained, the first, is used for the Cuvée rosé. Slow fermentation preserves the richness of aromas and contributes to the delicate, pale colour. After "resting“ for 24 months on its lees, it undergoes riddling and dégorgement: the yeasts are separated from the rest of the wine, which becomes brilliant.
Tasting – Colour: dusky, powder pink flecked with countless tiny bubbles, tending towards orange with ageing. The nose: small forest fruits, raspberry, dog rose, with slight hints of bread crust and brioche. In the mouth: soft and still young; vivacious, light and very drinkable.
Wine and Food Pairing – It excels in the role of “wine for all courses”, from an aperitif with cheese (and Peperonata Dolce!) and cold cuts, to appetizers (for example “Vitello Tonnato”, small fried balls of “Pappa al Pomodoro”...), to first courses such as a creamy pear risotto, and fish or seafood main dishes (even elaborate ones).
