This wine is a “Riserva” with a Tuscan soul, made from Sangiovese – a national heritage – aged in wood for 2 years. It represents its land and its people; it’s harmonious, dry, with soft tannins, full-bodied but not heavy, with delicate floral and slightly spicy aromas. The 2018 grape harvest, which was “dry” thanks to the total absence of rain during picking, let us take well-formed bunches to the winery, with thick-skinned, firm grapes. The moments in which the 3 grape varieties ripened were closer than usual, with the Cabernet ripening slightly earlier. After being picked and fermenting separately, the Sangiovese and Canaiolo aged in Slavonian oak casks and the Cabernet in used barriques, as always. After 12 months, blending was carried out and the wine then went on to age for another year in oak casks, and at least 3 months in the bottle.
Tasting – Colour: deep ruby-red in harmony with the garnet that adorns the rim, showing copious legs that announce an important alcohol content. The nose: the rich bouquet unfolds with nuances of ripe cherry and blackberry jam, complemented by balanced spicy tones and notes of aromatic herbs. Subtle finale of tobacco, wood (but with no hints of vanilla) and cinchona, with a fresh touch of menthol. In the mouth: it reveals a typical Chianti soul, entering softly and showcasing a warm but well-structured body Evident but pleasantly rounded tannins accompany the Sangiovese’s typically fresh flavour, and help counterbalance the vigorous alcohol content. Lastly, it lingers on with fruity and agreeably bitter reminiscences.
Wine and Food Pairing – It goes well with succulent, robust dishes (pappardelle with porcini mushrooms or wild boar sauce, splendid steaks, stewed hare, “fegatelli”), pappardelle with cabbage and aged pecorino fondue, cold cuts and mature cheeses. Try it on its own too, while chatting with friends or reading a good book.
