This wine was a “coup de coeur” for the judges of the Challenge International du Vin in Bordeaux and has always been a favourite among the Viallini – the Fattoria’s first unfiltered and the first white aged in wood. With its body, unique colour and complex bouquet it has captured the hearts of all those who have had it in their glass. Due to rainfall during the harvest the grapes were only picked on sunny days, in order to have healthy dry bunches. Fermentation and ageing took place in oak tonneaux barrels, where it remained for 10 months, with regular bâtonnage to take full advantage of the noble lees. After blending, the Barriccato Bianco was bottled without being filtered; the yeasts, which are natural antioxidants, give it an excellent ageing potential and enhance its aromas.
Tasting – Colour: intense, opalescent coppery gold, almost bronze as time passes, with a remarkable body for a white. The nose: wide ranging and complex, with notes of flowers (broom, lemon blossom), fruit (peach, dried apricot) and hints of vanilla pastry cream. In the mouth: sensationally aromatic, well-balanced body and freshness, pleasantly sweet even though perfectly dry.
Wine and Food Pairing – It goes well with flavoursome dishes such as fish “in guazzetto”, Cacciucco or Bouillabaisse, but also with fried vegetables, spices – curry, ginger, turmeric – or cuscus with fish. It can be paired, in alternative to the classic red, with ossobuco “alla Milanese” and saffron risotto.
