Aubergines, “the sun’s vegetables”, combine brilliantly with tomatoes, extra virgin olive oil and “odori” (= herbs and vegetables used to add flavour). So, several years ago the cooks at the Fattoria created this rich, flavoursome and slightly hot sauce, one of La Vialla’s first. It “sticks” to all pasta shapes, both long and short.
Ingredients: Tomatoes, Fresh aubergine pieces, Extra virgin olive oil, Salt of Trapani I.G.P., Basil, Garlic, Grape must, Lemon, Hot chilli pepper.
