The beautiful town of San Gimignano dominates a hilltop halfway, as the crow flies, between the Fattoria and the Mediterranean Sea. It’s the birthplace of a wine famous since medieval times, Vernaccia di San Gimignano. A fresh but full-bodied white wine, with a fruity bouquet and a sapid taste, which continues to have a multitude of fans. The rainy spring in 2023 made severe selection of the bunches necessary while picking the grapes. Pressing was carried out straight away, right beside the field, to preserve the aromas of the must. After fermentation, the wine aged for a year in oak tonneaux barrels; this gave the best combination between its structure and the wood’s tannins, and, thanks to regular bâtonnage, helped enhance the aromas.
Tasting – Colour: brilliant straw yellow, with constant, limpid reflections. It recalls the golden light of certain sunsets as it moves in the glass with good consistency. The nose: initially timid, as time passes it expresses itself with fine floral and fruity notes carried by the alcohol, yellow plum, camomile, passion fruit. Then the heart of its bouquet emerges, herbs, with sage and thyme providing the finishing touch. In the mouth: substantially dense; the structure makes the flavour well-balanced, between the softness of sweet alcohol and the slightly saline sapidity, fading into the aroma of slight almondy notes.
Wine and Food Pairing – Perfect with fish dishes such as anchovies “sotto pesto” (= with parsley, garlic and chilli pepper), Maremma-style salt cod, gilthead bream en papillote, steamed shellfish, or seafood spaghetti. It also goes well with first courses “from the land”, such as potato-stuffed tortelli dressed with cheese and pepper, linguine with basil pesto, gnocchi with Asparagina, as well as with quiche Lorraine, warm crostini with pecorino and rosemary, or rabbit with olives and wild fennel.
