Vernaccia, with its body and elegance, has a history dating back almost a thousand years. As early as the Middle Ages, reference was made of the qualities of this fragrant and flavoursome wine, the vines for which grow solely in the hills around San Gimignano. La Vialla’s vineyards there have varying ages and training systems (the old vineyard uses the spurred cordon system, the young one has tall espalier). In the rainy 2025 season the grapes ripened later, especially those in the new vineyard. They were ready, not overly sweet and with excellent aromas from mid-September onwards. Pressing took place immediately, at the edge of the field, and the must was then transferred straight to the winery (where it fermented at 16 °C). Bâtonnage was carried out for 3 to 4 months, allowing the yeasts to release polysaccharides, which give the wine natural sweetness and body.
Tasting – Colour: straw yellow, pale, brilliant. The nose: intense aromas of white fruit and wildflowers, with hints of walnut and almond. In the mouth: dry, fresh, sapid, with good acidity and considerable body for a white wine, and a clean finish with the typical almondy nuances.
Wine and Foor Pairing – This is a sapid, well-structured white that can go with dishes from both “sea and land”: pasta or rice with shellfish, squash ravioli with rabbit sauce, or lasagna with peppers, as well as fatty fish and fried salt cod. It’s excellent with appetizers, cold cuts, young cheeses (not overly salty ones), and also with pecorino or carrot flans.
