Grape blend: 100% Sangiovese
The bunches of Sangiovese grapes for the “Spremuta di Uva”, harvested in vineyards on the “plains”, were picked at just the right time to preserve a good level of acidity. The – undamaged – grapes are immediately destemmed and pressed in the Fattoria’s winery. The juice obtained is left in contact with the skins for a few hours to favour optimal extraction of polyphenols. After 24 hours “in the cold” – just above 0 °C – to let the coarser particles settle without natural fermentation beginning, the “Spremuta di Uva” is bottled just as it is! In fact, some natural grape pulp can be found in the bottles (if you’re not keen on it, let it settle and then pour the juice carefully). From vineyard to bottle only a few days go by; in this way, the good qualities of the sweet fruit are preserved to the fullest. The last step is pasteurisation, which is done at a low temperature to preserve the greatest amount of vitamins possible and... the exquisite, rustic flavour!
Tasting – Colour: intense purple-red with the typical pulpy sediment. The nose: hints of sweet blackberries, plums, raspberries and Marasca cherries. In the mouth: pleasantly sweet, fruity, with good acidity that binds and balances the aromas.
Suggestions – Drink it at room temperature or chilled, possibly diluted with water (with or without “bubbles”, according to taste), with ice cubes, slices of fruit or a little lemon... if and as you wish. For “grownups” it can also be mixed with some well chilled sparkling wine!
NB: To evenly distribute the precious sediment contained in the unfiltered juice, before drinking, delicately tip the bottle upside-down, at least twice.
