Linguine are a type of long pasta similar to spaghetti, but unlike spaghetti - which are cylindrical - they are flat, thinner at the edges and slightly thicker in the centre - hence their name, which comes from “piccole lingue” (= small tongues). They make a winning combination with basil pesto, but they are also great with tomato sauces, fish and squid ink sauces, as well as being delicious “alla Carbonara”(1).
(1) “Alla Carbonara” is a way of preparing spaghetti, with egg, grated pecorino cheese, diced pork jowl or “pancetta”, and pepper.
