A tempting pasta shape which gets its name from the special “tool” used to make it, a rectangular wooden frame that has metallic wires stretched along it, similar to those of a guitar! In the little artisanal pasta factory they use old bronze drawing machines and the drying process is slow and natural. This is a very consistent type of pasta to which sauces “stick” on all four sides (and the flavour is doubled!). Good with every sauce (even simple ones, like tomato or pesto) they go wonderfully with richer ones, Sugo all’ Aglione, alla Amatriciana, Ragu, Parmigianina. Once your pasta is combined with its sauce, don’t forget a sprinkling of grated cheese and a drizzle of extra virgin olive oil.
