Ingredients for 4 people:500 g fresh strawberries6 tbsp balsamic vinegar of Modena I.G.P.1½ tbsp cane sugar
Wash and dry the strawberries, then remove their leaves and stalk and cut each one into quarters. Bring the vinegar to the boil with the sugar in a small saucepan, continue “simmering” for 3-4 minutes until the mixture has a syrupy consistency and then leave to cool. Drizzle the sauce over the strawberries or, if you prefer, dip them in it one by one as you eat them.
