Ingredients for 4 people: 1 apple1 pear½ melon (cantaloupe, in season)4-5 strawberries10 grapes2 slices of pecorino cheese 1cm thick2 tbsp Balsamico Bianco2 tbsp acacia honey (fairly runny): optional
Use a sharp knife to cut the melon into fairly thick slices; remove the skin and seeds and then chop it into big pieces. Wash and peel the apple and pear, cut them in half, eliminate the top, bottom and core, then dice them. Rinse the strawberries under running water and dry them delicately; then remove the green crowns and the stalks and cut them in quarters. Wash the grapes, pat them dry and, if they’re large, cut them in half. Put all the fruit that you have prepared into a bowl, add the pecorino cheese cut into cubes, dress with the Balsamico Bianco and mix well. If you want to “sweeten” your salad, use honey instead of Balsamico Bianco, or both of them together. Choose the fruit you use according to taste and, above all, according to the season.
