Ingredients for 4 people:
65 g fresh basil (only the leaves)100 g pine nuts10 g shelled walnuts1 clove of garlic11 tbsp extra virgin olive oil1 pinch of coarse salt
Wash the basil leaves, and then lay them to drain and dry on kitchen paper or a cotton tea towel. When they’re dry, put them in the blender with the pine nuts, salt, garlic and half the olive oil. Blend everything thoroughly and pour the resulting sauce into a large bowl. Add the remaining olive oil, a little at a time, stirring very slowly to amalgamate everything well.
