This is a flavoursome, rustic vegetable recipe that originates from age-old Tuscan cuisine, which uses simple ingredients but is ingenious and... delicious. A tasty, spicy mixture of vegetables and tomatoes from the Fattoria’s vegetable patch, with extra virgin olive oil. It’s excellent as an appetizer, to dress all kinds of pasta, rice or couscous, and as a side dish for meat or fish dishes. It can also be used as a topping for bruschetta and pizza, in savoury tarts or as a filling for an excellent “calzone” (= stuffed pizza), in which case with the addition of pieces of mozzarella.
