Only carefully selected grapes – from the best vineyards in the Oltrepò Pavese area – contribute to the fine, silky bubbles, with their elegant notes of bread crust and brioche, gained in years of ageing in their bottles, without forgetting the classic (mineral) aromas, which are “a hallmark” for one of the noblest of Noble wines, for a great “champagne” produced by farmers….. from La Vialla!.
Tasting – Colour: limpid, brilliant straw-yellow. The nose: first impression of fleshy fruits, in particular of ripe golden delicious apple. Notes of bread crust and yeast mingle, slight salinity. In the mouth: freshness, good acidity and a deep sapidity in which the mineral aspects and warm notes of the long permanence on lees combine… slight hints of almond leave a long persistence in the mouth and a dry clean finish. Typical full-bodiedness and persistence of Pinot Nero.
Wine and Food Pairing – It goes well from an aperitif to fish-based first courses, from raw seafood to grilled fish, and it doesn’t shrink away from salami or pecorino that have been aged... well!
