The first “bubbly” born at the Fattoria, a must at every Viallino aperitif, dinner and celebration, comes from Pinot Nero and Trebbiano grapes (the former, a noble variety used for Champagne and sparkling wines, the latter, an extremely Tuscan white grape), which combine in a wine that is perfectly balanced between freshness, delicate fruit and flowers, and a characteristic body. The 2020 season was “regular”, at least from a meteorological point of view, and ripened rich grapes that were sweet, but not overly so, and scented. The Trebbiano gave excellent freshness to the blend, which was carried out just before the “presa di spuma” (= formation of bubbles), followed by various weeks of “resting” on the yeasts, during which the sparkling wine perfected itself and matured...
Tasting – Colour: brilliant straw-yellow tending towards gold. The nose: daisies, dandelions and camomile, with hints of citrus fruits. In the mouth: splendid acidic tartness with a soft and dry finish.
Wine and Food Pairing – Fresh, fragrant, “fizzy” and creamy, perfect for an aperitif or any other moment.... with light first courses (with seafood), risotto, fried food, pizza and second courses of fish or white meat.
