The adult vines – over 40 years old! – for La Vialla‘s Vernaccia Riserva grow in an uncontaminated spot (the Castelvecchio Nature Reserve, near to San Gimignano) with excellent exposure, at an altitude of 350-400 m.a.s.l. Their roots sink into clayey soil, once a seabed, and take advantage of deep water reserves that are extremely rich in minerals. The wine ages in 500 litre oak tonneaux barrels, already used once or twice.
Tasting – Colour: pale straw-yellow. The nose: rich, with prominent peach, apple and boisé tones, then pink grapefruit, wild herbs and hawthorn. Buttery and vanillary hints in the finish. In the mouth: enveloping in its softness and flower-scented alcohol, pleasant persistence with creamy notes and floral refrains. It fades away with a delicately bitter elegance.
Wine and Food Pairing – Soft, with a rich bouquet, it contrasts the sweetness of squash or saffron risotto, or the bitter taste of “cibreo di rigaglie” (= chicken liver and crests with egg and lemon sauce). Thanks to its character and structure it is suitable with robust dishes, cold cuts and cheese, but also shellfish and steamed white fish.
