The Trebbiano grapes, which are more “rustic” than those of the international varieties, adapt - in their land - to the most recent, unusual climatic changes. 2021 was a particularly hot year, with a droughty summer, but the period in which the Trebbiano ripened didn’t change very much. The grapes for this wine, which has excellent acidity, were picked in the “coolest” plots, where the grape variety’s typical characteristics are accompanied by a pleasant, prevailing vivacity. After pressing the bunches whole, the must fermented without haste at a controlled temperature (17 °C). This was followed by a period of rest, in which the fine lees were maintained in suspension (bâtonnage) to improve the natural reductive condition, preserve the wine’s aromatic complexity, and give it greater sweetness and body.
Tasting - Colour: straw yellow, it acquires more intense shades as it ages in the bottle. The nose: notes of wildflowers, followed by hints of apple and banana. In the mouth: dry, delicately acidic and persistent.
Wine and Food Pairing - It goes well with seafood starters, recipes such as salt baked, "en croute“ or grilled fish, and even more "substantial“ fish dishes, as long as they‘re not too acidic (without too much tomato or vinegar!).
