This recipe may be basic and a little “obvious”, but the proverb that goes with it (1) is entertaining and subtle.
Wash all the salad leaves and the rocket carefully, tear them up with your hands, put them in a salad bowl and “embellish” with thin flakes of pecorino. Prepare a vinaigrette with extra virgin olive oil, balsamic vinegar and salt, beaten together with a fork. Drizzle it over the salad and mix well. For the quantities to make the dressing, follow the proverb below.
(1) “A wise man for the salt, a miser for the vinegar, a generous man for the oil, a madman to shake it.” The latter is probably the easiest to find!!
