Wash and clean the vegetables, cut them into pieces and put them in a bowl. Add all the other ingredients and stir well. Leave to marinate for 24 hours, stirring from time to time. Then fill the glass jars with the vegetables, adding a tablespoon of marinade and a tablespoon of extra virgin olive oil in each one. Put the jars in a (deep) saucepan full of water; put it on the stove, bring it to the boil and then continue cooking for 10 minutes. Turn the heat off, leave it until the water is cold and remove the jars: in this way the “Giardiniera” will keep for a long time, stored in a cool, dry place.
