Ingredients for 6-8 people:400 g plain flour (plus 1 or 2 spoonfuls to sprinkle over the dough) 25 g fresh yeast80 g Extra Virgin Olive Oil (plus 2 spoonfuls to grease the tin) 230 ml approx. water600 g red grapes150 g sugar (plus 2 spoonfuls for the grapes)50 ml Chianti Riserva1 tsp fine salt
In a bowl, mix the flour with 75 g of sugar and a pinch of salt. Dissolve the fresh yeast in a little lukewarm water, pour it into the bowl with the flour and stir. Add the olive oil and, a little at a time, the water, stirring continuously. When the mixture becomes firmer, continue working with your hands until you have a soft ball of dough. Sprinkle it with a little flour, cover with a cotton tea towel and leave to rise for about 2 hours. When this time is up, spread the dough out in a baking tray (30 cm x 40 cm), lined with greaseproof paper and greased with oil, using a little flour to help you. Remove the grapes from the bunch, put them in a bowl with 2 spoonfuls of sugar and the Chianti Riserva, mix well and then scatter them over the dough in the baking tray. Sprinkle the surface with the remaining sugar and bake in a preheated oven, at 200 °C, for approximately 40 minutes.
