Ingredients for 5-6 people:1 large slice of turkey breast (approx. 400 g)200 g minced beef150 g sausages (Italian “salsiccia”)1 untreated lemon , the peel½ tsp powdered nutmeg½ glass red wine50 g grated aged pecorino cheese 2 sprigs of parsley (only the leaves) 1 sprig of thyme (only the leaves)1 sheet of ready rolled pizza dough (approx. 385 g) 1 sprig of rosemary (left whole)2 bay leaves 3-4 sage leaves7-8 tbsp Extra Virgin Olive Oil (plus enough to brush over the dough) salt pepper
Remove the skins from the sausages, crumble them up and mix them in a bowl with the minced meat, salt, pepper, nutmeg and grated lemon peel. Add the parsley and thyme chopped together (but not too finely) and mix everything together well, first with a wooden spoon, then with your hands. Lay the turkey breast on your work surface, flatten it with a meat mallet, then put the minced meat and sausage mixture in the centre; use your hands to give it a compact, oblong shape, then wrap the slice of turkey around it and tie it up with kitchen string. Brown the meatloaf in a deep pan with the olive oil, bay leaves, sage and rosemary; season with salt and pepper, turn it over several times and, when it has browned all over, increase the heat to maximum and pour in the red wine. When it has evaporated, turn the heat down and continue cooking for 40 minutes. Turn off the heat, leave to cool, remove the string and set aside the cooking juices. Lay out the pizza dough, brush a little olive oil over the surface, place the meatloaf on it and wrap the dough around it. Transfer the “roll” onto a baking tray lined with greaseproof paper, brush with some more oil and bake in a preheated oven, at 180 °C, for 25 minutes. If you think that the dough is getting too brown, cover with a sheet of kitchen foil. When the baking time is up, remove from the oven and leave to rest for 15-20 minutes. Cut the meatloaf into slices about 2 cm thick and serve it with a nice hot sauce, made by heating the cooking juices from the pan and mixing them with 1-2 spoonfuls of broth or water.
