Ingredients for 4-5 people:100 g Pecorino Gran Riserva 12 months500 g strawberries2 sprigs of thyme2 tbsp Aged Balsamic Vinegar 2 tbsp Extra Virgin Olive Oil salt and pepper
Carefully wash the strawberries, pat them dry with kitchen paper and then remove the green cap and stem. Cut them into thin slices and arrange them on a serving dish, overlapping them slightly. Drizzle with a little olive oil, season with salt and pepper, and sprinkle here and there the thyme broken up by hand and the pecorino cut into slivers. Before serving, add a few drops of aged balsamic vinegar of Modena on top. This is a rather unusual dish that will be a great success at the table: strawberries and pecorino cheese are a truly special combination… try it and see!
