An international grape variety that in Tuscany – around the beautiful town of Cortona – has found terrain suited to it and reached outstanding levels. From the Viallino vineyards at the foot of the town comes a wine with an elegant, fine and spicy bouquet. The hot season yielded bunches of plump, juicy grapes, rich in sugar, and lengthy maceration made it possible to extract aromas, polyphenols and anthocyanins in the best possible way. The period of ageing, partly in new tonneaux and partly in barriques already used twice, gave delicate notes of wood. After 24 months, the base wines were blended, followed by another period of “resting” and, finally, the wine was bottled.
Tasting – Colour: intense ruby red, with undertones that go from black cherry to purple aubergine. The dense legs around the glass reveal its robust body and age. The nose: an aromatic banquet of flowers, fruit and spices, with red roses, mulberry, blueberry jam, cherries and blackcurrants; followed by a light, well-balanced weave of liquorice, nutmeg, black pepper and vanilla. In the mouth: it seems young despite its age (and it can continue ageing in the bottle for a few more years), but it’s already elegant and soft, warm and dry, with pleasant tannin.
Wine and Food Pairing – It’s “at home” (and you can taste it!) with typical dishes from Cortona and Tuscany in general: crostini with Salsa Nera or olive pâté, pici with Salsa Etrusca, “Peposo” (a tasty stew) or stewed wild boar. It’s also perfect with pasta filled with smoked aubergine, dressed with butter, sage and pecorino.
