Grape blend: 100% Sangiovese
From field to bottle it only takes a few days for this “Spremuta”, a genuine freshly squeezed juice of the grapes from the vineyard. The bunches are harvested at just the right moment, they are nicely ripe but still have a good level of acidity. They are immediately destemmed, the grapes are pressed, and the juice is left to macerate on the skins for a few hours to favour the extraction of polyphenols and enhance the beneficial properties of the “Spremuta”. After 24 hours at a low temperature (just above 0 °C), in order to prevent the natural process of fermentation and let the coarse lees settle, the juice is bottled. This is followed by pasteurisation, and even during this phase the temperature is kept low to preserve the grapes’ good qualities as much as possible. What makes the Spremuta even more special is the presence of some of the fruits’ natural pulp in the bottles. If you’re not very keen, let it settle and then pour the juice slowly. But if you drink it as it is, you will have an unforgettable completely rustic flavour in your glass... the flavour of the vineyard!
Tasting – Colour: intense purple-red with the typical pulpy sediment in the bottom. The nose: fruity notes of blackberry, plum, raspberry and cherry. In the mouth: the natural sweetness can be enjoyed without becoming overpowering, thanks to the acidity that balances it.
Suggestions: it’s excellent as it is – on its own at room temperature – but also lends itself to infinite variations; chilled and diluted with water (with or without “bubbles”), with the addition of ice or pieces of fruit, or even mixed with some well-chilled sparkling wine.
