This rustic recipe, in which garlic abounds, appears to have been passed down – like the Salsa Etrusca – from our ancient “fathers”. It is typical of the district between Chiusi and Montepulciano (Siena), from where it spread to the surrounding areas enriched with tomatoes and other “additions”… depending on who’s cooking.
Ingredients: Tomatoes, Extra virgin olive oil, Garlic, Salt of Trapani I.G.P., Basil, Hot chilli pepper, Lemon, Grape must.
