Pinot Nero may change its "look", but not its character. Brief contact with the skins gives this Cuvée its powder pink colour, while maintaining the elegance of a noble and delicate grape variety that is the absolute protagonist of Metodo Classico wines. In the Oltrepò Pavese – an area of northern Italy renowned for the cultivation of grapes for sparkling wine – the hot, dry summer of 2022 gave grapes with less juice but a high sugar content. Careful manual harvesting made it possible to select the best bunches, from which only the free-run must, rich in soft polyphenols, was extracted. The first fermentation was followed by the "crucial" moment for every Metodo Classico, second fermentation in the bottle with indigenous yeasts, which took place in the spring and lasted several weeks. Once the fine, creamy perlage – the true signature of Cuvée Rosé – has formed, the wine is usually left to rest on its lees for at least two years, for the 2022 vintage this period became almost three years, much to the delight of those who uncork it!
Tasting – Colour: powder pink, brilliant but not too intense. The nose: small red fruits (raspberry, redcurrant, wild strawberry), floral notes of dog rose and delicate hints of yeast, bread crust and brioche. In the mouth: fresh and elegant, with the typical minerality and sapidity of La Vialla's Metodo Classico wines; the fine effervescence carries the distinctive abundance of aromas onto the palate.
Wine and Food Pairing – It's the "king" of aperitifs (with cheeses, cold cuts, Peperonata Dolce...), but also excellent with appetizers such as "vitello tonnato", delicate first courses – creamy risotto with pears – or fish and shellfish second courses. Cuvée Rosé can also conclude a meal wonderfully (and sweetly, why not?) served with a strawberry jam tart, or simply with fresh strawberries.
