La Vialla’s “oldest” rosé is made with red grapes and, immediately, reveals a delicious soul in
its bouquet: delicate aromas of forest fruits from the predominant grape, Montepulciano Cerasuolo. During the hot 2022 season, in order to avoid the wine becoming overly full-bodied and alcoholic, the Viallini in the winery added about 30% of Pinot Nero grapes to give freshness, vivacity and greater drinkability. The bunches harvested were pressed softly and the must was immediately separated from the solid particles, in order to prevent excessive extraction of colour from the skins. Until a few days before bottling, the wine was left on its fine lees to preserve it from oxidation and enhance its “sweetness”.
Tasting – Colour: an intense shade from dusty pink to magenta, tending towards orange if left to age at length. The nose: fresh raspberry and a hint of red currant, delicious floral notes of dog rose. In the mouth: a good, immediate sensation of freshness, followed by a long, fruity aftertaste.
Wine and Food Pairing – It’s a wine that loves all kinds of company; ideal as an aperitif and to accompany pasta dishes with tomato and/or aubergines (for example penne with Parmigianina). It’s excellent served with recipes for fish and vegetables, such as octopus with potatoes and artichokes, as well as white meat, grilled meat and fish, grilled vegetables (even with spicy sauces!), cold cuts and cheeses. It’s also a good base for sophisticated pink cocktails.
