Grape blend: 100% Sangiovese
Straight after picking the grapes are de-stemmed and pressed; the “cream” of the juice remains in contact with the skins for a few hours, to encourage the extraction of polyphenols. After resting for 24 hours (in the cold, to give the larger particles time to settle), without anything being added and without filtering, the “Spremuta” is bottled. From the vineyard to bottling it only takes 3 days: thus preserving the good qualities of the sweet grapes at their best. The last step, pasteurisation, is carried out at a low temperature, much to the “delight” of the vitamins and the exquisite, rustic flavour.
Tasting – Colour: deep, intense crimson with a typical pulpy sediment. The nose: hints of sweet blackberries, plums, raspberries and Marasca cherries. In the mouth: pleasantly sweet, fruity, with good acidity that binds and balances the aromas.
Suggestions – Drink it at room temperature or chilled, possibly diluted with water (with or without “bubbles”, according to taste), with ice cubes, slices of fruit or a little lemon (if and as you wish). Or (only) for “grownups”: mixed with some well chilled sparkling wine!
NB: To evenly distribute the precious sediment contained in the unfiltered juice, before drinking, delicately tip the bottle upside-down, at least twice.
