The Vernaccia di San Gimignano Riserva comes from particular, selected rows in La Vialla’s vineyard at Castelvecchio, on the hilltop, where the soil is looser, the bunches slightly less tightly clustered and the grapes more concentrated. Soft pressing the grapes ensures that their freshness and primary aromas are preserved. Stirring the lees (“bâtonnage”) and controlling the temperature of the grape must, help enhance the final bouquet. This very dry wine ages for a year in Tonneaux barrels containing 500 litres, either new or already used once.
Tasting – Colour: crystal clear, lively golden yellow, it immediately displays its fine character. The nose: elegant, delicate fruity aroma of Casciana apple, with floral notes recalling wild fennel, broom, camomile and freshly mown hay. The finish is both spicy, with notes of vanilla, and pleasantly balsamic. In the mouth: it’s soft and silky but not sweet, with a beguiling sensation of sapidity, juicy acidity and citrussy nuances. Fine and persistent; delicate vanilla and almond sensations linger on the palate.
Wine and Food Pairing – It goes well with typical Mediterranean seafood dishes such as sea bass “all’acqua pazza”, grilled gilt head bream, steamed shellfish, with pasta dishes from both sea and land, such as spaghetti “allo scoglio”, linguine with basil pesto, oven-baked pasta with asparagus and pecorino, and also with meat dishes such as rabbit with olives and wild fennel.
