The table is laid and the fragrant Orange Olives, from an old Tuscan recipe once prepared at harvest time and now almost impossible to find, and the Giardiniera, a mix of treasures from the vegetable garden dressed with delicate Balsamico Bianco, look wonderful. After a few moments the dishes are filled with colourful Fusilli, with their tight coils, just made to embrace the very Tuscan Sugo all’Aglione, a sauce of Etruscan origin. A drizzle of Extra Virgin Olive Oil, cold pressed in La Vialla’s Carbon free mill, heightens every flavour and is excellent on a “bruschetta”. To finish off there are the sweet, but not overly so, Cantucci biscuits with almonds, handmade and baked in the Fattoria’s wood-burning oven. On the table we also find two excellent wines: Vermentino, from La Vialla’s grapes grown in Sicily, a fruity, mineral, sapid white – the sea is just a “stone’s throw” from the vineyard – and the house red, Torbolone, strong and full-bodied.
