The Capocollo is prepared by salting the cut of meat that goes from the pig’s head to its shoulder (in fact “capo-collo” literally means head-neck), it’s tender and tasty, with a flavour that’s delicate and at the same time intense. It’s certified organic, seasoned and matured according to the traditional Tuscan recipe, it doesn’t contain any nitrites, nitrates or sodium ascorbate, and the meat used is produced without the use of hormones or antibiotics… unique!
