“Facciamoci du’ spaghi” (= let’s make some spaghetti in no time): any occasion is right for a nice dish of spaghetti. These ones, from the Fattoria, are drawn through bronze dies and dried slowly, they are deliberately coarse and able to “capture” any sauce... here they are accompanied by one that is ideal for them, the classic Sugo Bombolino, spicy and fragrant, from the Viallino vegetable patch. A drizzle of Extra Virgin Olive Oil and/or one or two teaspoons of “fiery” Piccantissima, are the perfect finishing touch. Piccantissima is a fragrant sauce made with tomato, onion, bell peppers – which counterbalance the spicy taste with their sweetness – and fresh chilli pepper (you can actually smell the fragrance!). The tomatoes for the two sauces are harvested by hand at the Fattoria; day after day, they’re prepared in La Vialla’s “Pentoloni” (= big pans), at a low temperature and in a vacuum, so as not to harm the nutritional and organoleptic characteristics.
